Preparation:
1. Soften cream cheese and beat with electric mixer until smooth. Add beaten egg yolks, salt, lime juice; blend gradually adding sugar, beating thoroughly until mixture is satiny; approximately 10 minutes.
2. Add stiffly beaten egg whites; fold gradually in mixture and blend until satiny again (approximately 10 minutes).
3.Pour into set graham cracker crust; bake at 375 for 25 minutes or until center is solidified.
Cool 1-2 hours.
4.Add pint of sour cream into which has been added 3 Tablespoons of sugar, half t of vanilla, and one Tablespoon lime juice.
5.Pour cream mixture over top of cheesecake and bake at 500 degrees for 5 minutes or until bubbly.
Cool for 2 hours. Store in refrigerator overnight. |
