Preparation:
In a large bowl, mix together the eggs, potatoes and onion. In a Teflon pan over medium heat or on a grill, drop by the tablespoon the potato mixture and cook until golden brown on both sides (turning them of course!)
Remove to paper towls (to remove oil). Keep them hot.
Makes 35 or so pancakes depending on how big your spoon is!
