Warm Tomato Macaroni Salad

An easy combination of healthy ingredients found mostly in the kitchen, a breeze to make and flexible to your preferences! Works easily as a side dish too.
 

Ingredients:

5 medium plum red fresh tomatoes
1 medium cucumber
1 Cup macaroni or fusili (pasta twists)
1 link brockwurst or any german sausage
4 tablespoons barbecue sauce
2 teaspoon sugar (optional)
1 tablespoons unsalted butter (do not use margarine)
1 teaspoon Chopped basil to garnish
 

Preparation:

Step 1: Cook the pasta until desired texture and drain. Step 2: Blanch the tomatoes and peel. Mince roughly. Step 3: Remove the skin off the cucumber and dice it. Do the same for your sausage of choice. Step 4: In a saucepan, heat up the butter and throw in the minced tomatoes to heat up. Step 5: Add in the cucumber and sausage. Stir well. Step 6: Stir in the pasta and the barbecue sauce, along with the sugar. Step 7: Cook for about 20 seconds more and serve immediately with a garnish of basil.

 

Nutritional Information:

For your health: Tomatoes are good sources of vitamin C. Cucumber gives that healthy crunch to the dish. In replace of the salt content, the sausages are used, as well as the barbecue sauce. Tips: - If you will be using canned tomatoes, you'd have to lose the sausages. - For vegetarians, the recipe works well without the sausage. However, do not use soy substitutes. - Do not use margarine. Butter works best and is a much healthier choice. Olive oil is good too.
