Chipotle Cheese Enchiladas

Enchiladas in chipotle sauce
 

Ingredients:

20 tortillas tortillas
7 Ounces chipotle peppers
10 Ounces Old El Paso Enchilada Sauce
1 pound Monterrey Jack Cheese
1 small onion - chopped in very small pieces
 

Preparation:

-Shred Monterrey Jack Cheese and add finely chopped onion -Fry tortillas in hot oil to where they are softly fried DO NOT OVER FRY. -Add cheese to tortilla and roll and place in a casserole pan -Add enchilada sauce in blender with half can of chipotle peppers -Pour sauce over Enchiladas -Spread left over cheese over enchilada sauce -Place casserole in 350 degree oven for about 10 minutes or until cheese is melted. -Serve hot and can be companioned with rice
