Kapusniak -- Polish Sauerkraut Soup

Ingredients:

2 pound smoked pork shanks
1 quart water
1 medium onion, well browned
1 quart sauerkraut juice
1/4 cup sugar
1/4 cup cream
1 large egg
1 Tablespoon flour
3/4 cup milk
 

Preparation:

1. Cook meat in water until well done.

2. Add onion, sauerkraut juice and sugar.

3. Beat egg, add flour, milk and cream. Add to soup and bring to a boil.

4. Serve with potato dumplings.
