Ingredients:

1 cup cornmeal
1 teaspoon salt
3 cups water
1 cup milk
2 large eggs
2 tablespoons bacon fat or butter
 

Preparation:

Boil water and slowly add cornmeal. Cook 5 minutes or until very thick. Cool until "warm". Beat in eggs one at a time. Add salt and milk. Preheat oven to 350F and preheat wrought iron skillet. Melt a couple of tablespoons of bacon fat in pan, add cornmeal mixture and return immediately to oven. Bake at 350F for 45 minutes or until knife comes out clean.
