Indonesian Gazpacho

Ingredients:

2 cups zucchini
4 cups chicken stock
1 cup cucumber
1 cup red or green bell pepper
1/2 cup scallions
1/2 cup celery
1/2 cup daikon
1/3 cup rice vinegar
1/4 cup cilantro
1 teaspoon soy sauce
1 teaspoon sesame oil
1/4 teaspoon liquid hot pepper sauce
1/2 cup enoki mushroom
 

Preparation:

combine ingredients (except enoki mushrooms)-mix well cover and chill for up to 24 hours ladle into individual bowls garnish with enoki mushrooms serve chilled
