Ingredients:

1 cup plain yogurt
1/4 cup finely shredded cucumber -- peeled
1 clove garlic
2 teaspoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon chopped fresh mint -- optional
 

Preparation:

Combine all ingredients in a medium bowl; stir well. Cover and chill thoroughly. Yields: 1 1/4 cups.
