Shells With Creamy Wine Sauce

Ingredients:

1 1/4 cups medium seashell macaroni -- uncooked
1/4 cup minced onion
1/4 cup water
1/4 cup chablis or other dry white wine
1/4 cup neufchatel cheese with herbs and spices
1 teaspoon ground pepper
1 spray vegetable cooking spray
 

Preparation:

Cook pasta according to package directions, omitting the salt and fat. Drain cooked pasta, and set aside. Coat a saucepan with cooking spray, and place over medium heat until hot. Add onion; sauté‚2 minutes or until tender. Add water and wine, and cook 1 minute. Add cheese, and cook 1 minute or until well blended, stirring with a wire whisk. Add pasta, tossing gently to coat. Cook 1 minute or until thoroughly heated, stirring constantly. Sprinkle with pepper. Yield: 2 servings (serving size: 1 cup).
