Thai Mango Relish

Ingredients:

1 medium mango
1 medium red bell pepper
1 medium cucumber
2 medium green chili pepper
1/4 cup fresh mint
1/2 medium green bell pepper
1 medium onion
1/4 cup malt vinegar
2 teaspoons garlic chili pepper sauce
 

Preparation:

1. in bowl, combine mango, red bell pepper, cucumber, green chilies, mint, green bell pepper, onions, malt vinegar and garlic chili pepper sauce. 2. blend together well. 3. cover and refrigerate for one hour or overnight. 4. serve as a condiment on sandwiches or as a side salad.
