Go-Lite: Not-So-Guilty Fettuccine

Ingredients:

1 pound fettuccine
1 teaspoon olive oil
1 clove garlic -- minced
3/4 cup light sour cream
1/2 cup 1% cottage cheese
1/4 teaspoon salt
1/4 teaspoon pepper
1 large egg
3/4 cup 2% milk
1 cup ham -- chopped
1/2 cup parmesan -- freshly grated
1 tablespoon fresh parsley -- chopped
 

Preparation:

In a large pot of boiling salted water, cook fettuccine for about 8 minutes of until tender but firm. Meanwhile, in skillet, heat oil over mdium heat; cook garlic for 30 seconds. Stir in sour cream, cottage cheese, salt and pepper. Heat through. Whisk together egg and milk; whisk into skillet. Stir in ham and Parmesan. Bring almost to boil; reduce heat to medium-low and simmer gently for 5-7 minutes or until thickened. Toss with pasta. Sprinkle with parsley. Serve immediately.
