Ingredients:

3 large navel oranges - -- (perfect)
1 medium red onion
2 tablespoons blanched sliced almonds
1/2 teaspoon sugar
3 tablespoons red wine vinegar
6 tablespoons extra-virgin olive oil
9 medium wine grapes
2 medium scallions -- sliced lengthwise, paper thin
1 teaspoon salt -- to taste
1 teaspoon freshly-ground black pepper -- to taste

Preparation:

Remove peel and pith from oranges and slice into 1/8-inch slices and lay on platter. Slice red onion paper thin and lay rings over oranges. Sprinkle almonds over oranges. In a small bowl, whisk together sugar, vinegar and oil to emulsify, and pour over salad. Sprinkle with wine grapes and scallions and season lightly with salt and pepper.
