Stuffed Potatoes

Ingredients:

1 medium potatoes -- 1- 1 1/2 per person
1 tablespoons amt. margarine
1 cup milk
1 medium Onion -- per taste
2 tablespoons flour
1 can tuna or chipped beef -- drained (if tuna)
1 Cup parmesan cheese
1 teaspoon paprika
1/4 Cup bacon bits -- (optional)
 

Preparation:

Bake 1 to 1 1/2 potatoes per person in 400F oven for 45 minutes to one hour. Cool.

While potatoes are cooling, chop onions and fry in margarine. After frying make sure there is 2 Tablespoons of margarine left in the pan. Add 2 Tablespoons flour and stir until smooth. Slowly add 1 cup milk, stirring until thickened. Add meat.

When potatoes are cool, halve potatoes, scoop out insides, and mash in bowl with a dab of butter and a small amount of milk. Put meat mixture in potato skins and gently pile mashed potatoes on top.

Sprinkle with Parmesan cheese, a dash of paprika, and crumbled bacon if desired.

Bake in 350F oven until brown on top (approximately 30 minutes).
