Lamb With Minted Vegetables

Ingredients:

1/4 cup olive oil
4 cups red or white potato
8 chops lamb chop
4 cups zucchini
2 tablespoons fresh lemon juice
2 tablespoons water
1/4 cup fresh mint leaves
 

Preparation:

heat the oil in a very large skillet, over a moderately-high flame add the potatoes and saute for 6-8 minutes, until golden remove the potatoes with a slotted spoon to drain season the chops with salt and pepper add the chops to the pan and saute for 5-6 minutes per side, until medium-rare remove to a heated serving platter, set aside pour off the fat from the pan add the zucchini to the pan, over a moderate flame heat and stir for 1-2 minutes add the lemon juice and water heat and stir for 1 minute add the potatoes and mint, stir season to taste with salt and pepper spoon around the lamb chops on the serving platter serve hot
