Preparation:
1. In large, heavy skillet, over medium heat, melt I Can't Believe It's Not Butter! Add garlic and cook until softened. Do not brown.
2. Add scallops and basil and sauté over medium-high heat, stirring constantly, for 2 minutes.
3. Add lemon juice and continue cooking, stirring constantly, 2 to 3 minutes longer. Season with salt and pepper. Serve immediately. Yield: 4 serving |
