Marinated Prawns

Ingredients:

3 pounds prawns -- cooked and cleaned
1 medium onion -- sliced
4 cloves garlic
1 dash oregano
6 whole chilis
1 cup oil
2 cups white vinegar
2 medium carrots -- parboiled, sliced
1/4 teaspoon salt and pepper to taste
1 can stuffed green olives and juice
 

Preparation:

Saute 1/2 onion and 2 cloves garlic in oil. Remove and discard. Add vinegar, garlic, onions, chilis, oregano and carrots. Bring to a boil, allow to cool. Add prawns and boil. Leave in refrigerator for 2 days.
