Jumbo Prawns With Creole Butter

Ingredients:

12 jumbo jumbo prawns
--- CREOLE BUTTER ---
1/2 cup butter -- softened
1 teaspoon fresh thyme leaves
2 cloves garlic
2 tablespoons black pepper -- coarsely ground
1/4 teaspoon cayenne pepper
2 tablespoons lemon juice
 

Preparation:

Make the creole butter: Combine in the food processor all the creole butter ingredients. Process until combined and set aside. Peel and devein the jumbo prawns. Thread them, three to a skewer, on bamboo skewers. Heat the barbecue to hot or turn on the broiler and adjust the oven rack to 6 inches below the heating element. Grill the prawns for 2 minutes on each side or until they are done to your liking. Serve the prawns with the creole butter on the side for dipping.
