Old Fashioned Salmon Loaf

Ingredients:

2 cups salmon -- 7 1/2oz undrained
12 pieces soda crackers
2 large eggs
1/2 cup milk
1 teaspoon butter -- melted
1/2 teaspoon dill weed -- dried
1 dash hot pepper sauce
1 medium lemon wedges
 

Preparation:

In large bowl, remove bones form salmon and mash (including juice with fork. Crush crackers to fine crumbs; add to salmon. Mix well. In bowl, beat eggs; mix in milk, butter, dill, hot pepper sauce and pepper to taste. Blend into salmon mixture. Transfer to greased and wax paper lined loaf pan. Bake in 350F oven for 30-35 min or until center is firm to touch. Let cool for 5 minutes Loosen edges with knife, invert onto serving platter. Garnish with lemon.
