Butterfish With Lemongrass

Ingredients:

1 tablespoon vegetable oil
2 pounds butterfish or other fillets
1 1/2 tablespoons vinegar
1 tablespoon thin sliced fresh lemongrass
1 medium fresh jalapeno -- chopped
1 dash sugar
1/2 cup water
 

Preparation:

Heat oil in frying pan on med. Add fish and then other ingredients. Simmer uncovered 10 min, spooning pan juices over fish frequently.
