Preparation:
Sprinkle fish with lime juice; set aside. Sauté onion, green pepper, and garlic in oil until tender-crisp. Add tomatoes and remaining ingredients.
Simmer until most of liquid evaporates, about 3 to 5 minutes. Place fish in skillet, spooning sauce over. Simmer 3 to 4 minutes. Turn fish and spoon sauce over.
Simmer an additional 3 to 4 minutes or until fish turns opaque and just flakes when tested with fork.
To serve, spoon sauce over fish and garnish with capers, if desired. |
