Sweet-And-Sour Shrimp

Ingredients:

4 cups water
4 cups uncooked instant rice
2 cups sliced carrot
1 1/2 cups fresh snow peas
1 spray vegetable cooking spray
3/4 pound medium-size peeled deveined shrimp
1/2 cup drained sliced water chestnuts
1 tablespoon white vinegar
25 ounces sweet-and-sour simmer sauce
 

Preparation:

Place water in a saucepan; bring to a boil. Add rice; cook according to package directions, omitting salt and fat. Combine carrot and snow peas in a 1-quart casserole. Cover with casserole lid; microwave at HIGH 5 minutes or until crisp-tender, stirring halfway through cooking time. Drain; set aside. Coat a large nonstick skillet with cooking spray, and place over medium-high heat until hot. Add shrimp; stir-fry 3 minutes. Add carrot mixture, water chestnuts, and next 2 ingredients; stir well. Cook 1 minute or until thoroughly heated.
