Preparation:
Combine all of the ingredients in a food processor and blend until smooth. If too thick add a little water, lemon juice or yogurt.
Makes 2 cups Pepper Pitas
Preheat oven to 400F.
Cut pitas into quarters.
Brush with the oil and sprinkle with salt, pepper and parsley. Bake until crisp, about 5 minutes. Makes 32 pitas
