Black Bean Casserole Ole (Lacto)

Ingredients:

1 cup chopped onions
3/4 cup yellow corn meal
2 teaspoons chili powder
1 cup evaporated skim milk
1/4 cup water
16 ounces kernel corn -- canned, d
16 ounces black beans -- canned, rinse/d
16 ounces canned stewed tomatoes
4 ounces canned diced mild green chile
 

Preparation:

Preheat oven to 350F Lightly spray an 8" square baking pan with non stick spray. In a large bowl, combine all ingredients. Mix well, Place in prepared pan. Bake uncovered 45 minutes. Source: Lean and Luscious and Meatless,
