Spicy Black-Eyed Peas

Ingredients:

2 tablespoons lemon juice
1 cup tomato juice -- * see note
1/4 teaspoon cayenne pepper
1/2 teaspoon turmeric
1/4 teaspoon cumin
1 tablespoon green pepper -- minced
3 cloves garlic
1 large onion -- chopped
1 tablespoon vegetable oil
15 ounces black-eyed peas
 

Preparation:

* We used diced tomatoes. Heat the vegetable oil in a large skillet and fry onion until golden. Add garlic, green pepper, turmeric, and cayenne pepper and fry for 2-3 minutes. Add tomato juice (or tomatoes) and cumin and cook for 5 minutes. Next add black-eyed peas and a little water if needed. Let it simmer for 15 minutes. Stir in lemon juice.
