Salmon Baked With Balsamic Butter

Ingredients:

4 tablespoons butter -- (1/2 stick)
1/4 cup balsamic vinegar
2 tablespoons diced red pepper
2 tablespoons diced green pepper
2 tablespoons finely diced shallots or onions
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 pound fresh salmon fillets
 

Preparation:

In a medium skillet, melt butter. Add vinegar, red and green peppers, shallots or onions and salt and pepper. Stir until butter melts and vegetables soften slightly, about 2 minutes. Remove from heat. Cut salmon into 4 pieces. Put in a shallow baking dish and pour butter sauce over. Cover with plastic wrap and refrigerate 45 minutes. Preheat oven to 400 degrees. Bake uncovered 5 to 9 minutes or until salmon is cooked through when cut into. Serve immediately. Prep Time: 10 minutes Cook Time: 45 minutes Makes: 4 servings This makes a lovely company dish served with mashed potatoes or rice and a green vegetable. The balsamic imparts a complex flavor to a simple dish.
