PASTA with Salmon and Leeks

Ingredients:

1 medium sized salmon filet. Skinned and boned.
1 medium leeks -- (white parts only)
4 pieces Shitake mushroom caps
1 tablespoons Hoisin Sauce
1/4 cup chicken stock
1 package Dried Udon noodles.
1 clove Garlic
1 piece Grated ginger
1 cup Flour for dusting seasoned with:
1/8 teaspoon cayenne pepper
1/8 teaspoon Fresh parsley.
 

Preparation:

Slice salmon into bite size portions. Dust with seasoned flour and shake off excess. Add to non stick pan. Brown on one side and turn to brown other side. Remove and place on plate. Cover with foil to keep warm. Boil water and add pasta. This pasta cooks quick; about 3-4 minutes. Add mushrooms and saute for 2 minutes. Add leeks and saute 1-2 minutes. Add ginger and garlic. Add stock and hoisin sauce. Add drained pasta to pan and some water from pasta pot if sauce too dry. Add parsley for garnish. Return salmon to pan and toss gently (or reserve and arrange on top of pasta bowls). Feeds 2-3 as main course. Variations: Omit cayenne pepper. Add some lime juice. Add 1-2 tomatoes (peeled, seeded, chopped) to saucepan after adding stock.
