Ingredients:

2 medium scallions -- cleaned
80 milliliters fresh lemon juice
2 bunches cilantro
2 cloves garlic -- minced
20 grams basil leaves -- slivered
4 medium ripe plum tomatoes -- (seeded)
50 grams purple onion -- peeled and cut
10 grams ginger root -- peeled and grated
15 milliliters balsamic vinegar
60 milliliters olive oil
1 teaspoon salt and white pepper
 

Preparation:

1. In a small bowl, soak scallions in lemon juice for 30 minutes. 2. Drain scallions; reserve half of the lemon juice. Mince the scallions. 3.
