Roasted Garlic Spread

Ingredients:

3 medium garlic heads
2 tablespoons drizzle of extra virgin olive oil.
16 ounces fat free cream cheese, softened to room temperature
3 tablespoons chopped fresh parsley
1 teaspoon salt and Pepper to taste.
 

Preparation:

Preheat oven to 250°F. Place unpeeled garlic heads into a small casserole dish. Drizzle with the olive oil and roast for about 20 minutes. Garlic will be done when a knife is easily inserted into a clove. Cool to room temperature. In a food processor process the cream cheese until fluffy. Cut the bottoms off of the roasted heads of garlic and squeeze them into the cream cheese mixture. Process the garlic and cream cheese together. Add the chopped parsley, salt and pepper; process till blended. Refrigerate spread 3 to 4 hours to allow flavors to blend
