Boricua Sweet Turnovers

This is very delicious and very easy to do. This delicious fritters you can eat it any time of the day even with your favorite meal and is nutricious. Great for parties too. Hope you enjoy it!
 

Ingredients:

1 Cup Buttermilk Pancake Mix
1/4 Cup Water for a thick consistency of the batter
1 large egg
1 large ripen yellow plantain
1 large Optional: Instead of plantain use baby bananas or 1 whole ripen banana.
4 tablespoons Optional: butter or vegetable oil
1 Jar Ppancake syrup or honey or molasses
 

Preparation:

Peel the ripen plantain, the softer the better. Cut 1/2 inch apart squach the pieces and put it on a dish. In a bowl add the pancake mix and water - make sure to follow directions on box for a very thick consistency of the batter, add 1 egg and beat till there's no flour bumps. Now, deep the ripen plantain or banana into the batter, and place it in the mediun-hot oil or butter and fry. Make sure before you you place the plantain in the frying pan your hand has a cup shape to hold a little extra batter, so the plantain will be cover with the batter. Brown it on each side, like when you are making the pancakes. Serve with syrup, or nay favorite toppins.
