Edamame with Green Beans

Ingredients:

16 ounces edamame (about 1-1/2 cups shelled)
10 ounces frozen green beans
1/4 cup diced onion
2 tablespoons olive oil
1/2 cup water
1 tablespoon sherry
1/2 teaspoon salt
 

Preparation:

Rinse edamame pods. Cover pods with water in either a microwave-safe bowl or in a pot. Either microwave for 2 minutes or bring to a boil for about a minute on the stove. Drain. Shell the edamame, discarding the outer shells. Set the beans aside. In a large skillet, heat the olive oil on medium heat and add the onion. Stir briefly until the onion begins to soften. Add the green beans, water, sherry and salt. Cover and cook for about 15 minutes. Add the edamame beans. Cook an additional 5 minutes, until the liquid is gone.
