Ground Beef Mexicana

Ingredients:

1 pound ground beef
2 tablespoons olive oil
1 jar chunky salsa (with visible chunks of veggies - mild, medium or hot)
1 Cup water
 

Preparation:

Crumble ground beef in frying pan (with oil if desired), and cook until well browned. Pour off excess fat. Add about 4 tablespoons salsa (more or less to taste) Add about 1/4 cup of water (carefully, everything is hot!) Stir then cover and simmer for about 10-15 minutes or until sauce has thickened. Add more salsa or water while simmering if you like the sauce thinner or thicker. Stir before serving. It tastes great by itself, or on bread or a roll for an RM. Additions (whatever you like and works for you on your diet): Brown some minced garlic - before you add the beef Green or black olives - when you add the salsa Green chilies - when you add the salsa Cheese - sprinkle on top at the very end of cooking and heat till it melts
