Preparation:
1. CUT STEMS OFF SPINACH AND WASH.
2. COOK BACON UNTIL TENDER. CUT INTO BITE SIZE
PIECES.
3. HEAT OIL IN PAN. ADD ONION AND SAUTE OVER
MEDIUM HEAT UNTIL TENDER. ADD SPINACH AND
BACON AND CONTINUE COOKING UNTIL SPINACH IS
WILTED.
4. SPOON MIXTURE OVER THE MIDDLE OF THE FISH
FILLETS. ROLL FILLETS AND SECURE WITH
TOOTHPICKS.
5. SPRAY A NON-STICK PAN WITH COOKING SPRAY.
PLACE FILLETS IN PAN AND SPRINKLE WITH
BREADCRUMBS.
6. COOK AT 350* FOR ABOUT 15-20 MINUTES OR UNTIL
FISH FLAKES.
7. SERVE HOT WITH LEMON BUTTER SAUCE.
LEMON BUTTER SAUCE:
1. POUR LEMON JUICE IN SMALL POT. OVER MEDIUM
HEAT, ADD BUTTER AND STIR UNTIL MELTED. ADD
SALT AND PEPPER TO TASTE.
