Ingredients:

1 pound zucchini
1 sprig finely chopped mint
2 tablespoons extra virgin olive oil
1 teaspoon salt and pepper to taste
2 tablespoons vinegar
 

Preparation:

Wash, slice, pat-dry and fry the zucchini in the oil. When golden brown remove from oil and rid of excess fat on a paper towel. Arrange in a serving platter and flavor with vinegar mixed with chopped mint. Salt and pepper to taste
