Baked Oatmeal 4

Ingredients:

5 cups oats -- rolled (raw)
2 1/2 cups milk -- rice, soy or dairy
4 medium eggs
1/2 cup honey
1 tablespoons baking powder
1 teaspoon cinnamon
1 dash salt
1 teaspoon vanilla extract
1/2 cup raisins -- seedless, unsulphured
 

Preparation:

Mix together and pour into an ungreased 9 x 13 baking pan. Bake at 350 for 30 minutes or until golden brown. This re-heats well. You can assemble ahead (even overnight) and bake later. ENJOY!!! This is a favorite of ours here. It is one of the most requested recipes on our whole foods loop and will be going in our cookbook. I make this ahead and place it in the fridge and bake in the morning. Also, we eat it cold sometimes. Also we eat it with ice cream for dessert sometimes!!
