Refrigerator Clean-Out Veggie Dish

Ingredients:

2 medium leaves of chard -- shredded
1 whole yellow onion -- sliced and diced
1/2 pound mushrooms -- chopped
2 medium zucchini
1 medium ripe tomato
1 medium yellow bell pepper -- chopped
1 medium scallion -- chopped
1/2 cup snow peas
2 cloves garlic
1/4 cup salad oil
1 teaspoon salt and pepper to taste
1/2 teaspoon sage to taste
1/2 cup cottage cheese
1/2 teaspoon paprika to taste
 

Preparation:

Add the leaves of chard to heavy skillet with hot oil. Add onion, mushrooms, zucchini, tomato, bell pepper, scallion, snow peas and garlic. Sprinkle with salt, pepper and sage. Simmer until ready to serve. To serve, top with cottage cheese and paprika. Approximately 8 minutes.
