Preparation:
In a small saucepan bring an inch of unsalted water to a boil; add peas and cook, covered, 3 minutes or until tender. Drain, transfer to a bowl and set aside. Using same sauce pan melt margarine over moderately low heat; add orange rind and cook, uncovered, stirring for 1 minute. Add mint, pepper and peas; cook and stir for 2 minutes or until heated through. |
