Hearts Of Palm Salad

Ingredients:

16 ounces whole hearts of palm -- canned
1 small sweet green pepper -- chopped
2 ounces sliced pimientos -- drained
1 stalk celery -- chopped
2 medium green onions -- thinly sliced
1 tablespoon fresh parsley leaves -- chopped
2 tablespoons vegetable oil
1/4 cup lemon juice
1 bunch lettuce leaves
 

Preparation:

Drain the hearts of palm and cut them into bite-size pieces. Add remaining ingredients except lettuce leaves. Cover, refrigerate overnight. Serve on lettuce leaves.
