Preparation:
Drain beets, reserving liquid. Add enough water to beet juice to make 1
cup.
Place sugar, cornstarch, salt and pepper in a 1 quart casserole. Stir in
vinegar and beet juice. Microwave at high (100%) until mixture is hot and
bubbly, 3 to 4 minutes, stirring twice during cooking time. Stir in beets.
Microwave at high (100%) until heated through, 2 to 3 minutes.
Makes 4 servings. |
