Dandelion Greens

Ingredients:

1 bunch dandelion greens
1 large hard-cooked egg
1 medium chopped onion
2 slices fried bacon
 

Preparation:

Use young tender greens. Cut off the roots; remove the buds and outside leaves. Cover with boiling water; cook until tender. They are quire bitter so you must throw away the first water and boil the greens a second time. Cut up egg, onion and bacon. Sprinkle over greens.
