Baked Acorn Squash with Honey and Walnuts

Ingredients:

2 medium or large acorn squash
8 tablespoons full flavored honey
1 cup chopped walnuts
1 tablespoon ground cinnamon
4 tablespoons unsalted butter -- melted
1 teaspoon freshly grated nutmeg to taste
 

Preparation:

Preheat the oven to 350 degrees. Cut the acorn squash in half crosswise. Scoop out the seed and stringy membrane from each half, then cut a thin slice from the bottom of each half so that it sits flat. Place the Squash halves in a 8 by 8 inch baking dish. Pour about a inch of water into the dish around the base of the squash halves. In a small bowl, mix the honey, walnuts and cinnamon, combining well. Spoon 1/4 of the mixture into each of the cavities in the squash. Drizzle the squash with the melted butter and top with the nutmeg to taste. Cover with foil and bake until a sharp knife easily pierces the flesh of the squash, about 45 minutes. Serve hot
