Summer Vegetables and Cheese

Ingredients:

1 small onion -- thinly sliced
2 tablespoons cooking oil
2 medium zucchini -- sliced
2 medium yellow squash -- sliced
3 medium tomatoes -- diced
8 ounces mozzarella cheese -- grated
 

Preparation:

Saute onion with oil in large skillet or wok. Cook until clear. Add=20 zucchini and yellow squash and cook until just tender. Add tomatoes and=20 cheese and cook until cheese has just melted. Serve immediately.
