Apple and Chipotle Chutney

Ingredients:

4 medium Granny Smith apples
2 medium chipotle or jalapeno chiles
3 tablespoons lemons
2 tablespoons lemon zest
1 Cup water
1 Cup sugar
1 medium leek
1 tablespoons fresh mint
 

Preparation:

Cut apples into quarter-inch cubes and finely chop chipotle chiles. In bowl, mix apples, chiles, lemon juice, lemon zest, water and sugar, and marinate for 1 hour. Strain liquid and set aside apple mixture. In small saucepan, simmer strained liquid for 20 minutes over medium heat. Slice leeks and ad to saucepan and let simmer for another 10 minutes. Add apple mixture and simmer 20 minutes until a syrup forms and apples are tender. Remove from heat, add fresh mint and allow to cool.
