Preparation:
1. Marinade: Combine ginger, brown sugar, salt, and pepper in a bowl. 2. Add peanut oil, orange juice, lemon juice, lime juice, garlic, and soy sauce. 3. Mix thoroughly. 4. Place chicken in marinade in an air-tight container. 5. Refrigerate overnight, or freeze until ready to use. 6. Drain chicken, reserving marinade. 7. Bake at 350 degrees for 45 to 60 minutes or cook on a barbecue grill. 8. If using a grill, place marinade in a saucepan and bring to a boil. 9. Use marinade to baste chicken while barbecuing. 10. Serve with fried plantains, rice, and black-eyed peas. |
