Stuffed Chicken Breasts

Ingredients:

4 medium chicken breasts -- skinned, boned and cut into small pieces
1 bunch fresh spinach -- (cleaned and dried)
3/4 cup pecans
1 cup low fat mayonaise
1 cup blue cheese -- cumbled
8 slices lean bacon
 

Preparation:

Mix together spinach, mayo and blue cheese and place a spoonful on center of each chicken breast. very carefully roll up the chicken so that nothing leaks out, then, starting at one end wrap with bacon strips. I usually use 2 per breast but it depends on size. when the bacon is wrapped tightly around the chicken you can use toothpicks to hold in place. Bake at 350 f until bacon is crispy. Remove from oven and slice into medallions.
