Preparation:
Place all ingredients except the chicken in the container of an electric
blender. Cover and blend until smooth. Reserve 1 cup of the juice
mixture; cover and chill.
Place chicken in a large glass dish and pour the remaining juice mixture
over the top. Cover and marinate in the refrigerator 2-3 hours.
Remove chicken from the marinade and discard marinade. Heat a large
skillet over medium-high heat. Cook chicken 6-7 minutes on each side or
until no longer pink inside.
Meanwhile, in a small saucepan, bring the reserved 1 cup juice mixture
to a boil over medium-high heat. Pour over cooked chicken and serve
immediatly. |
