Ginger Marmalade Chicken

Ingredients:

3 pounds whole broiler-fryer chicken
1 teaspoon seasoned salt
1 1/2 teaspoons ground ginger -- divided
1 teaspoon garlic powder -- divided
1 medium orange -- sliced
1 tablespoon butter -- melted
1 cup orange juice
1 tablespoon cornstarch
1/4 teaspoon salt
3/4 cup orange marmalade
 

Preparation:

Rinse chicken and pat dry. Combine seasoned salt, 1/2 tsp ginger and 1/2 tsp garlic powder. Sprinkle 1 tsp mixture inside chicken; fill with orange slices. Tie drumsticks in center and tuck in wing tips. Brush chicken surface with butter and sprinkle remaining salt mixture. Place chicken, breast side up, on rack in shallow roasting pan. Bake at 400 degrees F., 1 hour or until temperature reaches 170 to 175 degrees F. (measured at thickest part of thigh). In saucepan, combine orange juice, cornstarch, remaining 1 tsp ginger, 1/4 tsp salt and 1/2 tsp garlic powder. Pour in cooking juices from chicken. Bring to a boil; cook, stirring until thickened. Stir in orange marmalade, stirring until melted. Serve with chicken.
