Cornmeal-Coated Baked Chicken

Ingredients:

1/2 cup cornmeal
1/2 cup dry breadcrumbs
1/2 cup parmesan cheese -- grated
3 tablespoons chopped fresh thyme
1 1/2 teaspoons salt
1 teaspoon ground black pepper
6 pieces bonless skinless chicken breast halves
3/4 cup regular -- low-fat or nonfat buttermilk
2 tablespoons melted butter
 

Preparation:

Preheat oven to 425 degrees. Lightly oil a heavy large baking sheet. Combine cornmeal, breadcrumbs, cheese, thyme, salt and pepper in large shallow bowl. Dip chicken into buttermilk then into breadcrumb mixture, coating completely. Arrange on prepared baking sheet. Drizzle chicken with butter. Bake chicken until cooked through and golden brown, about 20 minutes. Prep Time: 5 minutes Cook Time: 20 minutes Makes: 6 servings I like this recipe because it gives the chicken a crispy crust without frying it. And the flavor from the cornmeal is terrific. Serve this with steamed spinach and creamed corn for a complete meal.
