Chicken In A Large Oven Pan

Ingredients:

4 pieces chicken pieces -- (breasts, legs) sufficient for group
4 large potatoes -- -- (1-per person) cut usually with a crinkle cutter in quarters or rounds
1 can tomatoes
1 Can Peas
1 medium Onion -- sliced
1 teaspoon Oregano
1 teaspoon salt/pepper -- to taste
1 tablespoons Olive Oil
 

Preparation:

Brown the chicken in some oil. In a large baking pan arrange the chicken and pour in drippings from browning. Add potato sections around the chicken pieces. Add raw onion rings on top. Squeeze canned tomato over the top. Sprinkle oregano, salt and pepper to taste. Drizzle olive oil over all. Cover with foil and bake at 350 degrees for at least two hours, basting occasionally. In the last half hour or so, add peas by sprinkling them over the top. Remove the cover to let much of the moisture evaporate, and to allow some of the top to become a bit crispy. Comments: This is a one-pan-contains-all meal with a no-nonsense name! It is a personal favorite that can be made with pork chops and sausage as well. It has become a favorite when a "portable" nourishing meal is needed for a large group -- such as funerals, etc. Believe the cooking time and test the potatoes. Underestimating can end in disaster.
