Chinese Braised Chicken

1 cup chopped onion
3 pounds chicken -- skinned, fat removed
1 cup water
1/2 cup low sodium soy sauce
2 tablespoons chopped fresh ginger
2 tablespoons sugar (or sugar substitute)
1 clove garlic


Place 1/2 cup chopped onion in bottom of crockpot liner. Add chicken. Be sure to remove ALL visible fat! Combine water, soy sauce, chopped ginger, sugar (or sugar substitute), and garlic. Pour over all. Add the other 1/2 cup of chopped onion. Cover and cook on low for 6 to 8 hours.
