combine rum, vinegar, soy sauce, lime zest, lime juice, and horseradish-mix well add chicken, cover, and chill for 2-96 hours combine salt, pepper, ginger, and flour-mix well remove chicken from marinade and dredge in seasoned flour heat oil to 375 degrees add chicken and fry until well browned on all sides drain on a cooling rack and blot with paper towels transfer to a hotel pan bake @ 300 degrees for 30 minutes serve hot |
